Vegan Hokey Pokey Candy


No one can say no to candies. So here's a new and healthy version of candies. It's made with healthy ingredients so there's no worry about putting extra calories. 

INGREDIENTS 


- 1 cup vegan sugar
- 4 tablespoons golden syrup (vegan)
- 2 teaspoons bicarbonate soda
- 3 tablespoons water 


METHOD 


1- First start by putting large parchment paper on a ceramic table and brush with oil.


2- Put the sugar, and the water into a saucepan( use a deep saucepan) on a medium heat and stir gently the mixture pushing the golden syrup with the sugar.

3- Let the pan on the heat and let it melt and come to boil and change the color ito something like maple syrup color or golden light brown!!


* watch the pan dont go away from it!*


* If you're using thermometer ( let it bubble until it reaches 149C on the sugar thermometer)*


4- When you're happy with the color remove from the heat and add the bicarbonate soda and stair the mixture well.


( be carful it will start bubbling and go crazy) 


5- Once you mixed well move the mixture on the parchment paper and let it set for about 20 minutes 


6- When done just bash at it and dip every piece in a melting chocolate and let it set and enjoy!

Asian-Peruvian Fried rice and vegan 'chicken' with lemon glaze

INGREDIENTS


Ingredients for Fried rice:


- 1/4 cup chopped onion
- 2 tbsp sesame oil
- 1/4 cup green onion, chopped
- 1/2 tbsp chopped ginger
- 1/2 red pepper, diced
- 2 cups cooked brown rice
- 1 1/2 tbsp soy sauce
- Pinch of salt and ground pepper

Ingredients for Lemon Glaze:


- 2 1/2 tbsp cup soy sauce
- 2 1/2 tbsp agave nectar
- 2 tbsp pineapple juice
- 2 tbsp coconut sugar
- 1/2 tsp ground pepper and cumin
- 1 tbsp apple cider vinegar
- Juice of 1 lemon

METHOD


METHOD FOR FRIED RICE


1- Heat oil in a large pan, add onions, ginger, red peppers and spices, sauté for 2 minutes.

2- Add rice, green onion and soy sauce, cook while stirring until heated.

METHOD FOR LEMON GLAZE


1- 1 tsp cornstarch + 1 tsp water, mixed
Combine everything in a saucepan over medium heat.

2- Bring to a boil; reduce heat and add cornstarch, reduce heat and cook until sauce thickens.

3- Glaze fried textured soy protein or vegan 'chicken' and serve on top of fried rice.

Vegan Mango Curry


Its sweet, sour, spicy and so flavorful that you will crave for more. This dish is vegan so it's healthy at the same time. Do try this dish at home and enjoy it's irresistible taste.



INGREDIENTS


- Brown rice
- Quinoa
- Cucumber
- Avocado
- Lime
- 2 Sweet Potatoes
- 2 cups of Green beans
- 1 Diced green bell pepper
- 3 garlic scapes
- 1 large white onion
- 2 medium size red potatoes
- ½ a cup of Coriander
- 6 large mint leaves
- 2 thumbs of ginger
- 1/4 of a cup of brown rice flour
- 2 tsbp of Gochujang chili paste
- Mango Curry Sauce
- 1 cup of coconut milk
- 2 cups of water
- 3- 4 tbsp of Tamiri soy sauce (to taste)
- 1 cup of diced mango
- 1 tbsp of lime zest
- 2 tbsp of turmeric powder
- 1 tsp of black pepper
- 1 tsp of cayenne pepper
- 2 tbsp of coconut oil
- 3 tbsp of lime juice

METHOD


1) Boil potatoes(with water) in a pot on high for 30-45 minutes.

2) Boil quinoa and rice with water. (Follow instructions on the package)


3) When the rice is finished add you lemon juice (to taste) and coriander and cook for another 5 minutes. Set aside.


4) Start cooking (sauté) your onions with coconut oil on a pan until transparent then lower your heat.


5) Add your garlic scapes (or regular garlic), ginger, and chili paste and sauté for 5 minutes or so.


6) Finally add your green beans and sauté for 5-10 minutes. Turn off and set aside.


7) On a separate pot add your sauce ingredients mix and let it simmer for 10 minutes.


8) Then add your boiled potatoes and your sauté into the pot.


9) Mix and let simmer for another 10-15 minutes.


10) Take ½ a cup of curry sauce into a bowl and add your brown rice flour and mix thoroughly until a paste consistency.


11) Add this paste into the pot and make sure its mixed well.


12) Finally add your mint and let simmer until creamy sauce consistency.


13 )Add your toppings and serves about 3-4 servings.

Chocolate Chip Banana Muffins


Indulge in the rich and irresistible taste of these muffins made with chocolate chips and banana. They are just perfectly sweet and comforts your palate. Make them at home and enjoy.



INGREDIENTS 


Dry ingredients:


- 2 cups all purpose flour (gluten free also works)
- 2 1/2 tsp baking soda
- 1/4 tsp salt


Wet ingredients:


- 1/2 cup coconut sugar
- 3 medium ripe bananas
- 3/4 cup non-dairy milk
- 4 tbsp coconut oil (same amount of applesauce for no-oil)
- 1 tsp vanilla extract


Extra Ingredients:


- 1/2 cup vegan chocolate chips


METHOD 


STEP 1.
Preheat oven at 350f(180c). In a bowl mix together the dry ingredients until well combined.


STEP 2.
Add the wet ingredients to a blender and blend until smooth, stir into the dry ingredients. 


STEP 3. Add in the chocolate chips.
Divide mixture in 15-18 muffin tins (3/4 full) and bake for 20-25 minutes.


Your muffins are ready to serve. Enjoy with your Loved ones.

Meatballs and Potato Gravy

A royal dish full of Mughal flavors and a strong aroma. This dish will crave you more. Impress your guests with this dish and enjoy its irresistible taste.


INGREDIENTS

Ingredients for Meatballs :

- Mince mutton 1 kg
- Red chilli powder 1 tsp
- Turmeric powder 1 tsp
- Coriander powder 1 tsp
- Garam masala ½ tsp
- Bay leaves 2 nos
- Green cardamom 8-10
- Cashew nuts paste 3 tbsp
- Ginger garlic paste 1 tbsp
- Onion 2 medium size chopped
- Green chillies 6-8 chopped
- Fresh coriander 1 bunch chopped
- Salt to taste

Ingredients for Gravy :

- Whole garam masala ( black pepper, cloves, black cardamom, Cumin Seeds )
- Oil 1 cup
- Onion paste 2 tbsp
- Ginger garlic paste 2 tbsp
- Cashew nuts paste 2 tbsp
- Red chilli powder 1½ tsp
- Coriander powder 1 tsp
- Potatoes ½ kg clean and cut in large pieces


METHOD


Method for Meatballs :


1- Take mutton Mince in a bowl and add red chilli powder, coriander powder, garam masala powder, Ginger garlic paste, Cashew nuts paste and salt to taste.

2- Now add Chopped Onions , Chopped Green Chillies and Chopped Coriander in it.

3- Mix it well with your hands.

3- Divide this Mince into equal parts and make balls of it.

4- keep them aside.


Method for Gravy :


1- Put oil in your vessel and heat it.

2- Add whole garam masala, green cardamom and bay leaves. Heat them for a few seconds.

3- Now add Onion paste and fry it until golden brown in color.

4- Add Ginger garlic paste and saute it for 2-3 minutes.

5- Add Cashew nuts paste, red chilli powder, coriander powder and salt to taste. Saute it until the oil separates from all the spices.

6- Now add meatballs one by one in the boiling gravy and cook it for 15 minutes.

7- Now add potatoes to the gravy and 2 glass of water and cook it for another 10 minutes until the potatoes are properly cooked.

8- Slow your fire and simmer it for another 5 minutes.

9- Garnish it with fresh coriander and serve it with chapati.

  Blueberry Popsicles


Get ready to enjoy summer with these icy refreshing and flavorful blueberry Popsicles. They are just perfect to give you a good mood. It's made with healthy ingredients so you don't have to worry about putting on extra calories. Enjoy these Popsicles anytime.


INGREDIENTS


- 1 can coconut milk or any non-dairy milk (coconut milk is the creamiest)

- 3 tbsp agave nectar or preferred sweetener

- 1 cup frozen or fresh blueberries


METHOD


1- Mix together coconut milk and sweetener and set aside

2- Place blueberries in a small saucepan at medium heat.

3- Stir the blueberries until they start to boil, set aside.

4- With a fork separate the blueberry skin from the juice and mix 2 tbsp of the juice with half of the coconut milk for the purple color.

5- Mix the other half with the skin of the blueberries for the blue.

*** For a raw version just blend all of the ingredients.***

To get the effect of "swirl" popsicles pour half of the colored coconut milk into the mold and "paint" swirls with the blueberry sauce using a spoon, fill them with the colored coconut mixture to the top and freeze for 4 hours until firm.

Asian Stir Fry Noodles


Asian cuisine is a very vibrant, delicious and flavorful cuisine. The flavors are very comfortable at the palate. These stir fried noodles with Asian flavors is absolutely delicious, mouthwatering and a must try. Try this recipe at home and enjoy the Asian flavors.


INGREDIENTS 


● 200g gluten-free noodles, prepared al dente
● 3 tbsp soy sauce
● 3 tbsp water
● 1 tbsp agave nectar or maple syrup
● 1 red onion, sliced
● 1/2 red pepper, sliced
● 1 green onion, sliced
● 1/2 tsp garlic clove, minced
● 1/4 tsp ground black pepper, cumin, any other spices
● 1 tsp cornstarch + 1tsp water, mixed
● 2 tbsp sesame oil
● Black sesame seeds

● Salt to taste


METHOD 


STEP 1.
Tofu, pressed and cooked into squares.


STEP 2.
Cook the noodles as pointed on the box.


STEP 3. Heat sesame oil in a large skilled and add onion slices, red pepper, garlic, black pepper and cumin. Sauté for 3-4 minutes on medium high.


STEP 4.
Reduce heat to medium and add in cooked noodles, stir soy sauce, agave, salt and water.

STEP 5. Then add the cornstarch mixture until sauce thickens and add sliced green onion. 

STEP 6. Fry the tofu squares with a little of oil, add to noodles along with the green onion.


Serve immediately and sprinkle sesame seeds on top.💙💙
