Chocomint Raw Vegan Treats

Chocomint Raw vegan treats

These treats are not only delicious but also have a refreshing taste. The mint really goes good with the chocolate and make a perfect treat. So try them at home and enjoy.

INGREDIENTS

- ½ cup raw cashews soaked overnight
- ½ cup coconut meat
- ¾ non dairy milk
- 1 tsp mint extract
- 2-3 tbsp agave nectar or maple syrup
- (Optional) natural vegan green food coloring
- 3-4 tbsp cacao nibs
- ¼ cup almonds
- ½ cup oats
- 1 cup prunes
- 2 tbsp cacao powder

METHOD

1. In a food processor grind up the almonds, oats and cacao powder

2. Add prunes and blend until it forms into a dough. Spread dough in a lined cake mold and leave it on the freezer for 15 minutes.

3. Blend together the rest of the ingredients except for the cacao nibs until smooth.

4. Add cacao nibs and blend again for a couple of seconds.

5. Take the base out of the freezer and pour mixture on top.(I also added some more cacao nibs on top)

6. Put it on the freezer for about 6 hours and let it chill at room temperature for 15 minutes before eating.

RECIPE

INGREDIENTS

Ingredients for Cake:

Dry:

- 2 cups all purpose flour

- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp salt

Wet:

- 1 1/2 cup almond milk

- 3/4 cup raw sugar (or coconut sugar)
- 1/2 cup coconut or almond yogurt (I have used both)
- 1 tsp vanilla extract
- 1 tsp apple cinder vinegar

Ingredients​ For Whipped cream:

- 1 cup raw soaked cashews (at least 6 hours)
- 1/2 cup water
- 1/2 tsp stevia powder
- 1-2 tbsp agave nectar
- 1/2 tsp vanilla extract

METHOD

Method For Cake

1- Preheat oven at 350F(180c). Whisk the dry ingredients until well combined.

2- In a different bowl whisk all of the wet ingredients and stir into the dry.

3- Mix to make a smooth batter and transfer to greased or lined cake pan (I used a bundt cake pan).

4- Bake for 30 to 35 or until toothpick from the center comes out clean.

5- Let the cakes cool for 10 minutes then remove from the pan and let it cool completely before slicing or layering with the cashew whipped cream.

Method for Whipped Cream

1- In a blender add all of the ingredients and start blending at medium speed, stop to scrape down the sides if you need it and blend until smooth.

Yakhni Pulao

A dish with a beautiful aroma, royal taste and full of colors. Yakhni Pulao is a dish which will make you irresistible to taste it only when you look at it. This dish will be enough to make your guests impressed and happy. So do try at home and enjoy with your Loved ones.

INGREDIENTS

Ingredients for Yakhni

- Mutton 1 kg
- Fennel seeds 2 tbsp
- Coriander Seeds 2 tbsp
- Onion  whole 2 medium size
- Garlic whole 2 nos
- Bay leaves 4 nos
- Salt to taste

Ingredients for Pulao

- Oil or ghee 3 tbsp
- Ginger garlic paste 2 tbsp
- Whole garam masala
- Sliced Onion 1 medium size
- Green Chillies 10-12 nos
- Curd 1 cup
- Milk 1 cup
- Kewda essence few drops
- Basmati rice 1 kg ( clean and soaked for ½ an hour)
- Salt to taste

OPTIONAL

*** 1 pinch of  Orange food Color ***

Ingredients for Tempering / Tadka

- Medium Size Onion 2 ( finely Sliced )
- Oil or ghee 3 tbsp

METHOD

Method For Preparing Yakhni

1- Wash and clean mutton properly. Add 4 glass of water in cooker.  Add salt, whole Onion, whole Garlic, bay leaves, Fennel seeds and coriander seeds.

2- Put a lid on it. Keep it on the flame and Wait until 5-6 whistle or until your meat is well cooked.

3- Your Yakhni is now ready.

Method For Preparing Pulao

1- Now in a vessel put oil or ghee. Put whole garam masala and heat for a few seconds.

2- Now put sliced Onion and saute it for a few minutes. Add Ginger garlic paste and saute it for another 2-3 minutes.

3- Add Green Chillies, curd and mutton Yakhni ( Keep Yakhni Stock aside ).

4- Add salt according to taste and let it cook for 5 minutes

5- Add Yakhni Stock and 4 Glass of Water and let it boil

4- Now drain water from rice and put it into the vessel. Cook it until the water is absorbed by the rice.

5- Take few drops of Kewda essence and a pinch of orange color and mix them well. With the help of a spoon, splash it over the cooked rice.

6- Put a lid on it and slow down the fire.

Method For Tempering / Tadka

1- In a pan put oil or ghee. Add sliced Onion and fry them until golden brown in color. Pour it on Yakhni Pulao.

2- Put the lid and keep your Pulao on slow fire for 2-3 minutes.

3- Yakhni Pulao is ready to serve. Serve it with chutney or raita.

Blueberry​ banana bread

You may be familiar with banana bread .  Making it more interesting, delicious and tasty here's another beautiful recipe of blueberry banana bread. 

INGREDIENTS

- 1 cup all purpose flour
- ½ cup whole wheat flour
- 2½ tsp baking powder
- ¼ tsp salt
- 5 stevia packets (or tbsp of sugar)
- ½ cup non dairy milk
- 2½ large ripe bananas
- 1 tsp vanilla extract
- 1 cup blueberries (toss them in 2 tbsp flour before adding)

METHOD

1. In a bowl whisk all the dry ingredients until well combined.

2. In a blender add the banana, non dairy milk, vanilla and stevia, blend until smooth.

3. Add to the bowl. Mix until well combined. Add in the tossed blueberries and mix.

4. Transfer batter to a loaf pan lined with parchment paper.

5. Bake for 40 minutes at 365f (185c) in a preheated oven, reduce heat to 355f (180c) and bake for another 15-20 minutes or until toothpick comes out clean, let it cool before slicing.

Jack Fruit Tacos

Tacos are favorite of all and tropical fruits are loved by everyone. When these two a bind together they create an amazing fusion. So here's a delicious recipe of Jack fruit tacos which you must try at home.

INGREDIENTS

- 1 can of jackfruit
- 1 cup of onion
- 5-7 minced garlic cloves
- 1 cup of tomato puree (homemade)
- 2 tbsp of coconut oil
- 1 1/2 tbsp of cumin
- 2 tsp of chipotle powder
- 1 tsp of chipotle flakes
- 1 tbsp of apple cider vinegar
- 2 tbsp of tamari soy sauce
- 1 tbsp of maple syrup or alternative

METHOD

1) Turn on stove on medium heat, using a frying pan add your oil, and then your chopped onion. 

2) Saute onion with oil for about 3 min then add your dry seasonings and saute for 3 min.

3) Add your jackfruit to the pan and saute for 5 min then add your garlic and fry for 2 min.

4) Add your apple cider vinegar, soy sauce, and maple syrup satue for 3 min.

5) Chop up some slicer tomatoes and blend until smooth and pour into the frying pan and let simmer for 10 minutes or until most water has evaporated.

6) After the it’s done as you let it cool down chop up some toppings and layer how ever you’d like.

7) Makes 10 Blue corn taco shells and topped with homemade sauerkraut, tomatoes, cilantro, and purple cabbage.

- 1/4 cup of almond milk

METHOD

1- Combine the crispy rice cereal with the protein powder and set aside


2- Microwave the maple syrup and the peanut butter until it has melted.

4- Add almond milk until a very thick batter is formed and refrigerate overnight.

INGREDIENTS

**Topped with shredded coconut**

Ingredients​for Top Mousse layer

- 2 ripe avocados

- 1/3 cup of soaked dates
- 3 tbsp of cacao powder

Ingredients for Middle layer

- Dried shredded Coconut

Ingredients for Bottom Almond Crust

- ½ a cup of almond meal

- 3 tbsp of almond butter- ¼ of a cup of maple syrup- 4 tsp of cacao powder

METHOD

1) Soak your dates for about 3 hours, drain the water out and add them into a blender. 

2) Take the rest of the mousse ingredients and use a high-speed blender until emulsified. 

(Avocados have to be super ripe!!)

3) Take the crust ingredients (into a bowl)and use a whisk to mix thoroughly.

4) Layer crust in silicone molds, add shredded coconut, then your mousse layer, topped with more shredded coconut.

5) Freeze for about 3 hours. Take out the freezer and let it sit for 15 minutes and they become super soft and creamy.

Oil free Potato Wedges

Making potatoes a little less junky and a little more healthy. Here's an interesting recipe of potato wedges which are made without oil. So you got to try them at home.

INGREDIENTS 

* 3-4 large russet potatoes, sliced into wedges
* Juice of 1 lemon
* 2 teaspoons pink Himalayan salct
* 2 teaspoons garlic powder
* 2 teaspoons Italian seasoning
* 1 teaspoon paprika 

* Salt to taste 

♡  Fresh parsley or cilantro for Garnishing 

METHOD 

STEP 1. Preheat oven to 400F. 

STEP 2. Cover cookie sheet with parchment paper. 

STEP 3. Place potato wedges in a large bowl with cold water and let sit for 30 minutes. 

STEP 4. Remove from cold water and pat dry. 

STEP 5. Drizzle with lemon juice and toss to coat. 

STEP 6. In a small bowl whisk together salt, garlic powder, Italian seasoning and paprika.

STEP 7. Sprinkle potato wedges with the seasoning mixture. Toss to coat. 

STEP 8. Place potato wedges on prepared baking sheet in a single layer with skin-sides-down. 

STEP 9. Bake for 20 minutes then raise temp to 500F and bake for another 15-20 minutes or until potatoes are fork-tender and golden. 

STEP 10. Sprinkle with freshly chopped parsley!
