Yakhni Pulao


A dish with a beautiful aroma, royal taste and full of colors. Yakhni Pulao is a dish which will make you irresistible to taste it only when you look at it. This dish will be enough to make your guests impressed and happy. So do try at home and enjoy with your Loved ones.

INGREDIENTS

Ingredients for Yakhni

- Mutton 1 kg
- Fennel seeds 2 tbsp
- Coriander Seeds 2 tbsp
- Onion  whole 2 medium size
- Garlic whole 2 nos
- Bay leaves 4 nos
- Salt to taste

Ingredients for Pulao

- Oil or ghee 3 tbsp
- Ginger garlic paste 2 tbsp
- Whole garam masala
- Sliced Onion 1 medium size
- Green Chillies 10-12 nos
- Curd 1 cup
- Milk 1 cup
- Kewda essence few drops
- Basmati rice 1 kg ( clean and soaked for ½ an hour)
- Salt to taste

OPTIONAL

*** 1 pinch of  Orange food Color ***

Ingredients for Tempering / Tadka

- Medium Size Onion 2 ( finely Sliced )
- Oil or ghee 3 tbsp

METHOD


Method For Preparing Yakhni


1- Wash and clean mutton properly. Add 4 glass of water in cooker.  Add salt, whole Onion, whole Garlic, bay leaves, Fennel seeds and coriander seeds.

2- Put a lid on it. Keep it on the flame and Wait until 5-6 whistle or until your meat is well cooked.

3- Your Yakhni is now ready.

Method For Preparing Pulao

1- Now in a vessel put oil or ghee. Put whole garam masala and heat for a few seconds.

2- Now put sliced Onion and saute it for a few minutes. Add Ginger garlic paste and saute it for another 2-3 minutes.

3- Add Green Chillies, curd and mutton Yakhni ( Keep Yakhni Stock aside ).

4- Add salt according to taste and let it cook for 5 minutes

5- Add Yakhni Stock and 4 Glass of Water and let it boil

4- Now drain water from rice and put it into the vessel. Cook it until the water is absorbed by the rice.

5- Take few drops of Kewda essence and a pinch of orange color and mix them well. With the help of a spoon, splash it over the cooked rice.

6- Put a lid on it and slow down the fire.

Method For Tempering / Tadka

1- In a pan put oil or ghee. Add sliced Onion and fry them until golden brown in color. Pour it on Yakhni Pulao.

2- Put the lid and keep your Pulao on slow fire for 2-3 minutes.

3- Yakhni Pulao is ready to serve. Serve it with chutney or raita.
