Chocolate Avocado Mousse Cupcakes


Its rich, creamy and absolutely delicious. These chocolate Avacado Moose Cupcakes are perfect to make your guests happy. Try this dish at home and enjoy.

INGREDIENTS


**Topped with shredded coconut**

Ingredients​for Top Mousse layer


- 2 ripe avocados

- 1/3 cup of soaked dates
- 3 tbsp of cacao powder


Ingredients for Middle layer


- Dried shredded Coconut

Ingredients for Bottom Almond Crust


- ½ a cup of almond meal
- 3 tbsp of almond butter- ¼ of a cup of maple syrup- 4 tsp of cacao powder


METHOD


1) Soak your dates for about 3 hours, drain the water out and add them into a blender. 


2) Take the rest of the mousse ingredients and use a high-speed blender until emulsified. 


(Avocados have to be super ripe!!)

3) Take the crust ingredients (into a bowl)and use a whisk to mix thoroughly.


4) Layer crust in silicone molds, add shredded coconut, then your mousse layer, topped with more shredded coconut.


5) Freeze for about 3 hours. Take out the freezer and let it sit for 15 minutes and they become super soft and creamy.
