Raw & Vegan 'Donut Cereal'


Here is a yet another recipe - Raw &Vegan Donut Cereal. This recipe is totally vegan and sweetened with natural agents. It's taste is as good as donut made with heavy ingredients. The advantage of this recipe is that it's a little low in calories and high in taste so that you may enjoy it's taste with low calorie consumption.

INGREDIENTS


- 2 cups oats, blended into a meal
- 1 cup ground almonds
- 1/2 cup date paste
- 1-2 tbsp maple syrup
- 1 tsp pure vanilla powder or extract
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- a few tbsp water

pinch of salt


To serve:


- Melted Chocolate & Sprinkles to ice donuts


- Plant based Milk of choice to serve



METHOD


1. Combine the ground almonds/oats and spices in a mixing bowl.


2. Add the date paste & maple syrup and work with your hands until it begins to stick together into a dough.


3. Gradually adding a few tbsp of water at a time to help it bind. 


4. Add enough water until it is a pliable dough that holds together well.


5. Press into mini silicone donut moulds and chill for 20-30 minutes.


 **(or you could prepare them the night before for the morning)**


6. If icing with vegan chocolate simply ice then chill them in the freezer for 5 minutes to set the chocolate.


7. Serve with plant based milk and anything else your heart desires.



 ** Date paste is simply dates that have been pitted, soaked in boiling water then drained and processed into a thick paste. I keep it stored in the fridge for these kind of occasions & for sweetening things.


Vegan Burger


Burger is loved by everyone. But many people who are vegan are unable to find a good vegan burger. So to solve this problem, here is a wonderful recipe of vegan burger which is perfect for vegetarians and will be loved by non-vegans too. You can easily prepare this burger with available ingredients. Try this recipe at home and satisfy your 'burger' craving 

INGREDIENTS 


Ingredients for Chickpea Patties: 


- 2 cups cooked chickpeas
- 3 tbsp oat flour
- 1 medium red onion
- 1 medium white onion
- 4 cloves garlic
- 2 tbsp oil
- handful fresh coriander (chopped)
- 3 sundried tomatoes
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1/2 tsp salt
- 1 tsp ground coriander
- 1/2 tsp paprika powder
- 1/4 tsp chili powder


METHOD

STEP 1. Chop your onions​ and garlic, add the oil and fry it in a pan for 3-4 minutes. 


STEP 2. Put it into the food processor bowl with all the rest of the ingredients and pulse blend until well combined but still a bit chunky.


STEP 3. Form round shaped patties with your hands and bake them in 200 Celsius for 30-35 minutes, turning them after 15-20 minutes.

STEP 4. Put the patties into grilled buns.


STEP 5. Layered with sundried tomato paste (just seasoned sundried tomatoes blended smooth with some olive oil), caramelized onions (fried in a pan with some oil and tbsp maple syrup until golden), fresh tomato slices, mashed avocado and greens of choice. 

Peanut Butter Balls

Here is a special carnival treat with lots of peanut butter and chocolate. This treat is so  easy to make and will be ready in time. You can also serve this to your guests. Prepare them and home and enjoy it's rich taste.

INGREDIENTS 


 - 3/4 cup peanut butter
- 1/3 cup rice malt syrup
- 1/4 cup coconut oil

- 1/4 cup coconut flour
- 1/4 cup almond meal
- Pinch of salt 

- Dark chocolate for coating

METHOD
 


STEP 1. Combine all of the ingredients in a bowl (except dark chocolate).


STEP 2. Allow the mix to set in the fridge/ freezer for 20 minutes approx. 


STEP 3. Roll the mix into 1 tbsp balls (I did 2 tbsp). 


STEP 4. If the balls start to soften put them back in the freezer for about 5 minutes, then roll again to create a smooth round shape.


STEP 5. Melt some dark chocolate, coat the balls in the chocolate and top with some sea salt. 


● Store in the fridge.

Chocolate Brownie


Enjoy the irresistible taste of chocolate brownie at home with my simple and delicious recipe. It's taste feels heaven in your mouth. Try this at home and enjoy with your loved ones.


INGREDIENTS FOR THE BROWNIE:


1 1/2 cup walnuts
1 cup soft medjool dates, chopped
1 Tbsp + 2 tsp cacao powder
1 Tbsp cacao nibs
1 vanilla bean
1/4 tsp salt


INGREDIENTS FOR THE FROSTING:


1/2 cup cashews, soaked for 6h
1/2 cup almond mylk
1/4 cup cacao powder
4 dates
1/2 tsp vanilla extract
1 Tbsp coconut sugar
1 1/2 Tbsp coconut oil, melted
Pinch of salt


METHOD 


STEP 1.
Combine brownie ingredients in a food processor and process until a sticky and smooth dough forms.


STEP 2.
Fold in some extra chopped walnuts and cacao nibs to get a crunchy consistency.


STEP 3. Transfer to a 8" baking pan (lined with parchment paper or greased with coconut oil).


STEP 4. Press the dough down using a spatula or spoon (easier using your fingers) until flat and firm.


STEP 5. Let rest in the fridge while preparing the frosting.


STEP 6. Combine the frosting ingredients (except for the coconut oil) and blend until nice and creamy.


STEP 7.
Stream the coconut oil into the mixture.


STEP 8.
Using an offset spatula spread the frosting evenly over the brownie.


STEP 9.
Cut into slices and garnish with cacao nibs 🍫❤ 


         You can garnish it with some dry fruits or give your own touch by adding your style.

Chocolate Vegan Cake


There are many people who are vegan and loves chocolate cake but are not able to find vegan chocolate cake as it is not easily available in every sweet shop. Though it is so easy to make, still it is not easily available. So to solve this problem and to fulfil your craving of chocolate cake, here is a simple recipe which is vegen! In this recipe, even eggs are not used so that people like Jains who are strictly vegetarian can enjoy it. Make it at home and enjoy it's rich taste.

INGREDIENTS 


1 1/4 cup self- raising flour
1/2 cup coco sugar (powdered down)
1/3 cup raw cacao
1 tsp baking powder/soda (aluminum free)
2 flax eggs
1/2 cup almond milk t
1 tsp vanilla
1/2 cup melted coconut oil
1/2 cup boiling water (filtered)

METHOD 

Simply mix all dry ingredients with wet ingredients and blend altogether. Bake for 45 min on 180 degrees. Decorate with some melted vegan chocolate and strawberries.

Dip


An easy to make and any time dip to give twist to any thing is on high demand nowadays. This cheesy mint dip is absolutely delicious and can be prepared conveniently at home. You can also store this dish in refrigerator for 1 week. Prepare it at home and make your boring snacks interesting.

INGREDIENTS 


- Cream cheese  2 tbsp
- Mint leaves  2 stems
- Green chillies  2 nos.
- Salt : a pinch
- Black pepper  8 nos.
- Lemon juice  1 tsp
- Sugar  1/2 tsp

METHOD 


STEP 1. Grind mint leaves, green chillies, black pepper, lemon juice and sugar.

STEP 2. Make a paste out of it.

STEP 3. Add this paste to cream cheese and mix it well.


YOUR CHEESY MINT DIP IS READY TO SERVE. IT'S REFRESHING AND DELICIOUS. ENJOY IT WITH NACHOS, FRIES, CHIPS ETC.

Chocolate and Mandarin Raw Cheesecake


Enjoy the rich flavor of cheesecake made with chocolate and mandarin. This dish is perfectly sweet with a zing of mandarin which goes really well together. You can make it at home conveniently as the ingredients used in this dish are easily available.

         Try this at home and present it in your style.


INGREDIENTS FOR THE CRUST:


1/2 cup almonds
2 dates, pitted and chopped
1 tsp maple syrup
1 tsp coconut oil, melted
1/4 tsp vanilla extract
Pinch of salt 


INGREDIENTS FOR THE FILLING:


3/4 cup cashews, soaked
1/2 cup cacao powder
1/2 cup almond milk
1/4 cup mandarin juice
1/2 tsp mandarin zest
1 Tbsp maple syrup
3 dates
1/4 tsp vanilla extract
1 Tbsp coconut oil, melted
Pinch of salt 


METHOD
:


STEP 1
. In a food processor pulse the almonds until broken down.


STEP 2. Add the remaining crust ingredients and process a few times until you get a dough.


STEP 3.
Press into a 4 inches springform pan using your fingers to form an even layer. 


STEP 
4. Leave in the freezer for 30 min until it firms up. 


STEP 5.
Rinse the pre-soaked cashews and drain them well.


STEP 6.
Blend all the filling ingredients together (except coconut oil) in a high-speed blender until very nice and smooth. 


STEP 7.
Stream the coconut oil into the mixture.


STEP 8.
Pour the cream over the crust and put it again into the freezer for at least 3 hours. 


STEP 9.
Remove the cheesecake from the mold and transfer to the fridge before serving.


STEP 10.
Decorate with pomegranate seeds and mandarin slices 🍊🍫


   Your Chocolate and Mandarin Cheesecake is ready to serve. Enjoy it with your family and friends.
