Delicious protein rice crispy treats​

If you are looking for a healthy treat then this is the right recipe you are looking at. It's light, sweet, crispy and an any time snack. Jush make them at home and store it in an air tight box and carry them anywhere.

INGREDIENTS

- 2 cups gluten-free crispy rice cereal
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1/4 cup protein powder (I used a vegan chocolate protein powder)
- 1/4 cup of almond milk

METHOD

1- Combine the crispy rice cereal with the protein powder and set aside


2- Microwave the maple syrup and the peanut butter until it has melted.


3- Pour the mixture into the dry ingredients and mix well.


4- Add almond milk until a very thick batter is formed and refrigerate overnight.

Chocolate Avocado Mousse Cupcakes

Its rich, creamy and absolutely delicious. These chocolate Avacado Moose Cupcakes are perfect to make your guests happy. Try this dish at home and enjoy.

INGREDIENTS

**Topped with shredded coconut**

Ingredients​for Top Mousse layer

- 2 ripe avocados

- 1/3 cup of soaked dates
- 3 tbsp of cacao powder

Ingredients for Middle layer

- Dried shredded Coconut

Ingredients for Bottom Almond Crust

- ½ a cup of almond meal

- 3 tbsp of almond butter- ¼ of a cup of maple syrup- 4 tsp of cacao powder

METHOD

1) Soak your dates for about 3 hours, drain the water out and add them into a blender. 

2) Take the rest of the mousse ingredients and use a high-speed blender until emulsified. 

(Avocados have to be super ripe!!)

3) Take the crust ingredients (into a bowl)and use a whisk to mix thoroughly.

4) Layer crust in silicone molds, add shredded coconut, then your mousse layer, topped with more shredded coconut.

5) Freeze for about 3 hours. Take out the freezer and let it sit for 15 minutes and they become super soft and creamy.

Oil free Potato Wedges

Making potatoes a little less junky and a little more healthy. Here's an interesting recipe of potato wedges which are made without oil. So you got to try them at home.

INGREDIENTS 

* 3-4 large russet potatoes, sliced into wedges
* Juice of 1 lemon
* 2 teaspoons pink Himalayan salct
* 2 teaspoons garlic powder
* 2 teaspoons Italian seasoning
* 1 teaspoon paprika 

* Salt to taste 

♡  Fresh parsley or cilantro for Garnishing 

METHOD 

STEP 1. Preheat oven to 400F. 

STEP 2. Cover cookie sheet with parchment paper. 

STEP 3. Place potato wedges in a large bowl with cold water and let sit for 30 minutes. 

STEP 4. Remove from cold water and pat dry. 

STEP 5. Drizzle with lemon juice and toss to coat. 

STEP 6. In a small bowl whisk together salt, garlic powder, Italian seasoning and paprika.

STEP 7. Sprinkle potato wedges with the seasoning mixture. Toss to coat. 

STEP 8. Place potato wedges on prepared baking sheet in a single layer with skin-sides-down. 

STEP 9. Bake for 20 minutes then raise temp to 500F and bake for another 15-20 minutes or until potatoes are fork-tender and golden. 

STEP 10. Sprinkle with freshly chopped parsley!

Banana Fudge Nicecream

A new but a version different from ice cream. Its delicious, tasty and perfectly sweet which looks almost like ice cream -banana fudge nicecream. It's a perfect dessert to make you happy. Try it making at home and enjoy.

INGREDIENTS

- 2 cups of soaked cashews
- 4 overripe bananas
- 2 tbsp of maple syrup
- 4 tbsp of cacao powder
- 3 tbsp of cacao nibs
- ½ a cup of almond milk

METHOD

1) Soak cashews for over 6 hours (preferably), drain them and add them into a high-speed blender.

2) Add your four bananas into the same blender with your rest of ingredients, except the cacao nibs. Blend until very smooth.

3) Pour into a bread pan or any container and add your cacao nibs however you’d like.

4) Freeze for 3-4 hours, then its read to serve.

Sweet Potato Pancakes

Sweet potatoes are perfect substitute of potatoes. They are more healthy to make them tasty here's my recipe of Sweet potato pancakes. Try them at home and enjoy.

INGREDIENTS 

- 100g of sweet potato, mashed
- 2tbsp of coconut cream

* (coconut yogurt would work just as fine)
- 1 tsp of vanilla extract
-1 chia egg 

* (1tbsp of chia seeds+3tbsp of water)
- 1 tsp of apple cider vinegar
- 3/4 cup of water or non-dairy milk
- 25g of oat flour
- 65g whole wheat flour
- 1 tbsp of unsweetened vegan protein powder * (optional) – you can skip and put 1tbsp more flour
- 3tbsp of brown sugar
- 2tsp of baking powder
- ½ tsp of ground cinnamon
- ¼ tsp of ground cloves
- Pinch of salt

● Coconut oil for cooking

METHOD

STEP 1. At first prepare your chia egg – add 1tbsp of chia seeds and 3tbsp water to a dish, stir well and let it thicken for around 5 minutes.
STEP 2. To the chia egg add the mashed sweet potato, coconut cream, vanilla extract, apple cider vinegar, water and whisk until combined.

STEP 3. In a seperate bowl mix the two types of flour, protein powder, salt, cinnamon, cloves and sugar.

STEP 4. Stir the wet ingredients into the dry ingredients until just combined.
STEP 5. Add the baking powder to the batter and mix until just combined

● (try not to overblend, it will help your pancakes to be really fluffy)

STEP 6. Let rest for 5 minutes while preheating the frying pan to medium-low heat. 

● (Make sure your frying pan is not too hot.) 

STEP 7. Scoop a heaping tbsp of batter onto the lightly-greased frying pan and gently spread to make a pancake shape. 

STEP 8. Cook over medium heat until edges are dry and bubbles form, then flip.

Serve it with fruits, vegan yogurt and any type of syrup you like.

Vegan Hokey Pokey Candy

No one can say no to candies. So here's a new and healthy version of candies. It's made with healthy ingredients so there's no worry about putting extra calories. 

INGREDIENTS 

- 1 cup vegan sugar
- 4 tablespoons golden syrup (vegan)
- 2 teaspoons bicarbonate soda
- 3 tablespoons water 

METHOD 

1- First start by putting large parchment paper on a ceramic table and brush with oil.

2- Put the sugar, and the water into a saucepan( use a deep saucepan) on a medium heat and stir gently the mixture pushing the golden syrup with the sugar.

3- Let the pan on the heat and let it melt and come to boil and change the color ito something like maple syrup color or golden light brown!!

* watch the pan dont go away from it!*

* If you're using thermometer ( let it bubble until it reaches 149C on the sugar thermometer)*

4- When you're happy with the color remove from the heat and add the bicarbonate soda and stair the mixture well.

( be carful it will start bubbling and go crazy) 

5- Once you mixed well move the mixture on the parchment paper and let it set for about 20 minutes 

6- When done just bash at it and dip every piece in a melting chocolate and let it set and enjoy!

Asian-Peruvian Fried rice and vegan 'chicken' with lemon glaze

INGREDIENTS

Ingredients for Fried rice:

- 1/4 cup chopped onion
- 2 tbsp sesame oil
- 1/4 cup green onion, chopped
- 1/2 tbsp chopped ginger
- 1/2 red pepper, diced
- 2 cups cooked brown rice
- 1 1/2 tbsp soy sauce
- Pinch of salt and ground pepper

Ingredients for Lemon Glaze:

- 2 1/2 tbsp cup soy sauce
- 2 1/2 tbsp agave nectar
- 2 tbsp pineapple juice
- 2 tbsp coconut sugar
- 1/2 tsp ground pepper and cumin
- 1 tbsp apple cider vinegar
- Juice of 1 lemon

METHOD

METHOD FOR FRIED RICE

1- Heat oil in a large pan, add onions, ginger, red peppers and spices, sauté for 2 minutes.

2- Add rice, green onion and soy sauce, cook while stirring until heated.

METHOD FOR LEMON GLAZE

1- 1 tsp cornstarch + 1 tsp water, mixed
Combine everything in a saucepan over medium heat.

2- Bring to a boil; reduce heat and add cornstarch, reduce heat and cook until sauce thickens.

3- Glaze fried textured soy protein or vegan 'chicken' and serve on top of fried rice.
