Blueberry Popsicles

- 1 can coconut milk or any non-dairy milk (coconut milk is the creamiest)
- 3 tbsp agave nectar or preferred sweetener
- 1 cup frozen or fresh blueberries
1- Mix together coconut milk and sweetener and set aside
2- Place blueberries in a small saucepan at medium heat.
3- Stir the blueberries until they start to boil, set aside.
4- With a fork separate the blueberry skin from the juice and mix 2 tbsp of the juice with half of the coconut milk for the purple color.
5- Mix the other half with the skin of the blueberries for the blue.
*** For a raw version just blend all of the ingredients.***
To get the effect of "swirl" popsicles pour half of the colored coconut milk into the mold and "paint" swirls with the blueberry sauce using a spoon, fill them with the colored coconut mixture to the top and freeze for 4 hours until firm.
